Greek-Style Avocado and Feta Salad

As I was preparing Sunday dinner this past week I came across the two beautiful avocados I had hidden last week and forgotten about. Why did I hide avocados? Because I had a plan to make some guacamole on the weekend....but I completely forgot. Don't you hate when that happens? I didn't want to leave these beauties another week so I figured I should incorporate them into the dinner menu somehow. Time to put my improvisation skills to work! 

Hmmm...what else did I have in the fridge? Cucumber, red onion, a yellow pepper, some sweet grape tomatoes, a Meyer lemon, some feta and cilantro. What more could you ask for? The end result was a simple, fresh and super-tasty starter that I can't wait to make again. I love improvisation in the kitchen!
I chopped the onion, pepper, tomatoes and cucumber and set them aside. Then I crumbled the feta and chopped the cilantro. Then I cut the avocados in half and removed the flesh, reserving the shells.  I chopped the avocado into bite-sized chunks and tossed them with some fresh lemon juice to keep them from browning. Then I dumped the other veggies into the bowl with the avocado.
I tossed it all together with some more fresh lemon juice, a wee bit of olive oil and some salt. I divided the salad between the avocado shells and topped it with the crumbled feta. Then I added an olive to each just for fun. 
So pretty, and so simple...sometimes simple is best. This was fresh and tasty and the perfect starter. I will be making this again soon! A printable recipe card follows. Enjoy!
